  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 2 cloves of garlic, minced
  • 1/4-1/2 teaspoon chipotle chili powder or canned chipotles

  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 tablespoon olive oil
  • Fresh cilantro, chopped
  • 1 head green leaf or Boston lettuce, washed & separated

  1. Cut steak into thin strips and marinate in oil, cumin, garlic, chili powder, salt & pepper & lime juice for 1-2 hours.
  2. Heat a large skillet over medium high heat and sear steak strips until beginning to brown on all sides. Remove from pan & set aside. Heat the same skillet over medium heat, add remaining olive oil to same skillet and cook onions until they are fragrant then add pepper. Cook until the onions are translucent and the peppers have softened.  Retune steak to the skillet and toss with fresh chopped cilantro.
